Locally-based, nutrient-dense, affordable, and widely accepted functional food products are urgently needed as a practical intervention strategy. To formulate Nutrimosa (Moringa Flour-Chicken Samosa) as a high-protein and iron-rich functional snack for children and pregnant women in stunting prevention efforts, and to assess its organoleptic acceptability. An experimental food product development study was conducted at Posyandu Merpati III, Puskesmas Biru, Bone Regency, South Sulawesi, in May 2026. Organoleptic evaluation was performed with 30 semi-trained panelists using a 4-point hedonic scale (dislike, slightly like, like, very like). Nutritional content was analyzed using food table analysis based on TKPI 2020. Each Nutrimosa piece (43 g) contains 88.2 kcal energy, 4.30 g protein, 6.44 g fat, 6.96 g carbohydrate, and 0.97 mg iron. Organoleptic results showed excellent acceptability: color 100% positive (like 73.3%; very like 26.7%), aroma 100% positive (like 36.7%; very like 63.3%), taste 100% positive (like 36.7%; very like 63.3%), and texture 96.7% positive (like 63.3%; very like 33.3%; slightly like 3.3%). Three formulations were evaluated by 15 trained nutritionists using organoleptic tests for color, aroma, taste, texture, and overall acceptability. Formulation 2 (F2), with a 50:50 tofu-to-chicken ratio, achieved the highest scores in color, aroma, and texture, while Formulation 1 (F1) excelled in taste. Nutritional analysis of F2 revealed per-serving values of 100.4 kcal, 6.0 g protein, 6.9 g fat, and 3.9 g carbohydrates. This study aimed to identify the determinant factors associated with the incidence of anemia among pregnant women in the working area of Paccerakkang Health Center, Makassar City. Methods and Study Design: A cross-sectional study was conducted involving 35 pregnant women as respondents. Data were collected through a structured questionnaire and analyzed using the chi-square test. Results. Among the 35 respondents, 45.7% were found to be anemic. Bivariate analysis demonstrated statistically significant associations between anemia and both nutritional status (p = 0.035) and gestational age (p = 0.016). Conversely, no significant associations were observed between anemia and maternal age (p = 0.187), educational level (p = 0.646), occupation (p = 0.677), presence of infectious diseases (p = 1.000), birth spacing (p = 1.000), antenatal care (ANC) visits (p = 0.508), adherence to iron and folic acid supplementation (p = 0.677), knowledge about anemia (p = 0.379), protein intake (p = 0.877), vitamin C intake (p = 0.830), or dietary iron intake. Conclusion. This study aimed to evaluate the implementation of standardized nutrition care for a pediatric patient with multiple infectious diseases treated at Harapan dan Doa Hospital, Bengkulu, through an observational case study involving a single subject. Nutritional assessment showed that the patient experienced malnutrition with low anthropometric indicators and inadequate dietary intake. During a three-day monitoring period, nutrient intake gradually improved following nutritional intervention: energy intake increased from 47.77% on the first day to 80% on the third day, protein intake from 65.19% to 109.01%, fat intake from 35.53% to 83.08%, and carbohydrate intake from 48.52% to 75.92%. In conclusion, the patient was prescribed a high-calorie, high-protein diet with soft food consistency administered orally. Lemuru fish nugget is an Alternative Supplementary Food with high protein content that based on local food. The purpose of this study was to determine the acceptability and nutritional content of Lemuru fish nugget. This study used descriptive-quantitative design to describe acceptability of the nuggets. The nutritional content of the product was calculated using the Indonesian Food Composition Table (TKPI). The sampling design used purposive sampling with the samples 49 respondents. The results of the study showed that 44 respondents (89,8 %) consumed the entire portion of nuggets. 5 respondents (10.2%) left 25% portion uneaten nuggets. No participants refused to consume (100% leftover) or left 50%, 75%, or 95% of the portion. The nutritional content of one portion nugget (50 grams) includes 68.1 kcal of energy, 7.7 grams of protein, 1.6 grams of fat, and 5.6 grams of carbohydrates.&nbsp; The acceptability of the lemuru fish nuggets (Gemuru) showed positive results. The Indonesian government is currently implementing various things to improve nutritional problems, one of which is stunting. Supplementary feeding (PMT) is a long-standing intervention used to improve the nutritional status of toddlers. Providing locally sourced food supplements is one of the programs implemented in Puskesmas 1 Negara. The research method used is a comparative descriptive study with a retrospective approach that describes an independent variable, namely the implementation of the PMT program. The population in this study were 55 toddlers who received the Local PMT program for 1 month at the Negara 1 Community Health Center, with a total sample of 55 samples using total sampling. Data on differences in weight and height of toddlers before and after being given PMT were analyzed using the paired T Test. Based on the paired sample test on the weight and height of toddlers before and after the provision of PMT, there was a significant difference between the initial weight and height and the final weight and height. This shows that there is an effect of providing PMT to toddlers on the weight and height of toddlers with nutritional problems. Before the provision of PMT, the nutritional status of toddlers was malnourished in 43 samples (78.2%) and very malnourished in 12 samples (21.8%). After being given PMT, the nutritional status of 23 toddlers (41.8%) with normal nutritional status, 29 samples (52.7%) with malnutrition status and 3 samples (5.5%) with very malnutrition status improved. One contributing factor to this high rate is the low adherence to iron supplement consumption, which is influenced by limited understanding of its benefits. Visual education, such as banners, is considered potentially effective in improving knowledge and adherence to iron supplement consumption. Methods: This study employed a pre-experimental one-group pretest-posttest design involving 33 adolescent girls at SMP Dwi Jendra Denpasar who received nutrition education about anemia using banners. Students' knowledge was measured using a multiple-choice questionnaire administered before and after the education session. The data were analyzed descriptively and quantitatively using paired t-test to determine the significance of score changes. Results: Knowledge scores significantly increased from a mean pretest score of 58.2 (SD=7.3) to a posttest score of 96.0 (SD=5.0), with p &lt; 0.001. The increase in scores indicates that the educational intervention using banners was effective in improving nutrition literacy about anemia. Conclusion: Nutrition education using banners was proven effective in increasing students' knowledge about anemia and the importance of iron supplement consumption. Visual media like banners can be used as a simple yet meaningful educational approach in school-based anemia prevention programs. One approach to addressing stunting is through the provision of nutrient-rich supplementary foods based on local ingredients. This study aimed to develop a functional food product, specifically a potato-based perkedel with moringa leaves and minced chicken, as a nutritious supplementary food. The research employed a quasi-experimental method with three product formulations and organoleptic testing by 50 nutrition expert panelists. The results showed that formulation P1 (Potato 60%, Moringa Leaves 20%, Minced Chicken 20%) had the highest overall preference in terms of color, aroma, taste, and texture. The nutritional content per serving (50g) includes 62.0 kcal of energy, 3.0g of protein, 3.2g of fat, and 5.5g of carbohydrates. Adequate nutrient intake is essential for optimal growth and development during early childhood. In the field of food innovation, moringa leaves have potential as a dietary supplement, including in the form of Moringa Squeeze Pudding. This study aimed to assess toddlers’ acceptance of Moringa Squeeze Pudding and evaluate its effectiveness in improving body weight and nutritional status among children aged 12–60 months.</p> <p><strong>Methods: </strong>This was an experimental study conducted in two phases: a descriptive quantitative organoleptic test to assess product acceptability, followed by an analytical cross-sectional study to evaluate the effectiveness of Moringa Squeeze Pudding in improving body weight and nutritional status using Paired T-Test. The sample included children aged 12–59 months with poor nutritional status (Z-score according to weight-for-length/height) from Posyandu Bougenville RW V, Berua Subdistrict.</p> <p><strong>Results:</strong> The intervention of Moringa Squeeze Pudding over 7 days showed a positive impact on toddlers’ body weight and nutritional status. The average body weight increased from 9.88 kg to 10.21 kg post-intervention (p = 0.0001; p &lt; 0.05). The average weight-for-height Z-score improved from -2.09 SD (undernourished) to -1.44 SD (normal nutrition status) with a statistically significant difference (p = 0.003; p &lt; 0.05).</p> <p><strong>Conclusion:</strong> Moringa Squeeze Pudding intervention is effective in increasing toddlers’ body weight and improving their nutritional status. Given the critical nutritional needs during early childhood and persistent concerns such as stunting and micronutrient deficiency, the formulation integrates bioactive-rich moringa with naturally sweet corn to enhance both nutritional value and sensory appeal. The pudding was produced in two distinct layers and assessed through organoleptic testing by semi-trained panelists evaluating color, aroma, taste, and texture. Results showed high acceptability across both formulations, with the second formulation (F2) receiving the highest preference ratings, especially for taste and overall appeal. Nutritional analysis revealed that each 25g serving contributes essential nutrients including protein, vitamin C, and beta-carotene, supporting immune function and growth. To meet the nutritional needs of toddlers, the government has developed a local supplementary feeding program (PMT). This study aims to determine the effect of providing local PMT on malnourished toddlers at the Ajangale Community Health Center. This study is an observational analytical study with a cross-sectional approach. This study was conducted in July 2025 using secondary data. The sample was taken based on a total sampling of 49 samples, and analyzed using statistical analysis using the Wilcoxon signed rank test. The results of the study showed that the nutritional status of toddlers before PMT administration was malnourished status for 49 toddlers (100%). There was an increase in nutritional status in malnourished toddlers of 35 people (71.4%) with normal nutritional status. There was an effect of PMT administration on malnourished toddlers p&lt;(0.05). Iron deficiency leading to anemia can impair child growth and increase the risk of stunting. Adolescent girls are especially vulnerable to anemia due to inadequate iron intake, unbalanced diets, and low compliance with iron supplementation through weekly iron tablets (Tablet Tambah Darah or TTD). A lack of awareness regarding anemia and the importance of TTD contributes to the high prevalence of anemia and the long-term risk of stunting. Therefore, early health education is essential to equip adolescent girls with knowledge on anemia prevention and its implications for reproductive health and child development. This study aimed to improve adolescent girls’ knowledge regarding the importance of iron tablet consumption as a preventive measure against anemia and stunting risk. Methods and Study Design. Health education was delivered through a counseling session using lectures and interactive Q&amp;A methods, supported by printed bookmark media. The target group consisted of 75 female students at SMP Negeri 11 Makassar. Participants' knowledge was measured using a structured questionnaire administered as a pre-test and post-test. Data were analyzed using a paired t-test to evaluate the effectiveness of the intervention. Results. There was a significant increase in participants’ average knowledge scores from 52.00 (pre-test) to 70.67 (post-test) after the educational session. The paired t-test showed a statistically significant difference (p = 0.000) between pre- and post-intervention scores. Additionally, participants demonstrated high enthusiasm and active engagement throughout the session. Conclusion. Educational intervention using printed bookmark media effectively improved adolescent girls’ knowledge about iron supplementation. This study aims to explore the effects of nutritional management on a pediatric patient diagnosed with acute respiratory distress syndrome (ARDS), decompensatio cordis (left and right), community-acquired pneumonia (CAP), and marasmus using the Standardized Nutrition Care Process (NCP).</p> <p>This case study applied an individualized approach for a pediatric patient in the PICU of Dr. Wahidin Sudirohusodo Hospital, Makassar. The research focused on nutrition screening, assessment, diagnosis, intervention, monitoring, and evaluation over a 10-day period.</p> <p>Nutrition screening results indicated severe malnutrition with a score of 5 and comorbidities. The nutritional diagnosis was established under the domains of Nutrition Intake and Behavior. Anthropometric measurement of mid-upper arm circumference (MUAC) increased from 10 cm to 11 cm. Biochemical monitoring still indicated anemia. Nutrition-focused physical examination (NFPE) identified prominent ribs, loss of fat in the cheeks and triceps, and thinning hair. The child's intake of F100 formula via enteral feeding gradually increased during the transition phase, then progressed to the rehabilitation phase with soft oral foods, increasing from 70% to 100% of requirements. Malnutrition typically begins during pregnancy and continues into the early stages of a child’s life, but the signs of stunting usually become apparent only after the child reaches the age of two. Stunted and severely stunted children are those whose length/height-for-age falls below the World Health Organization (WHO) Multicentre Growth Reference Study (MGRS) standard. Posyandu cadres, as the frontliners in the community, play a crucial role in education, monitoring child growth and development, and implementing nutritional interventions. However, the effectiveness of this role is highly influenced by the cadres’ perception of their own role in stunting prevention. A positive perception can enhance their motivation and performance in carrying out their duties.</p> <p><strong>Objective:</strong> To explore the perceptions of Posyandu cadres regarding their role in stunting prevention, identify their understanding of stunting, examine the roles they play in stunting prevention activities, and assess the obstacles or challenges they face in carrying out these roles.</p> <p><strong>Methods: </strong>This study employed a qualitative approach with a descriptive design. Informants were selected using purposive sampling, involving a total of five participants. Data were collected through in-depth interviews. The research instruments included an interview guide, writing materials, and a voice recorder.</p> <p><strong>Results:</strong> The Posyandu cadres in the working area of Paccerakkang Public Health Center have demonstrated an understanding of stunting, its causes, and its prevention strategies. In addition to routinely conducting monthly weighing, measuring, and monitoring of nutritional status at the Posyandu, cadres also engage in education, counseling, and health promotion activities, as well as conducting home visits to target households. The incidence rate of SE in children varies between 10 and 73 cases per 100,000 children per year. <strong>Objective:</strong> To present the implementation of standardized nutritional care processes provided to pediatric patients with Convulsive Status Epilepticus + Slit Ventricle Syndrome Post VP Shunt + Hydrocephalus + Comorbid Congenital Heart Disease. <strong>Method:</strong> This study used an observational study design with a case study approach. The data used in this study included primary data obtained through interviews and secondary data from the patient's medical records. <strong>Results:</strong> Nutritional status assessment showed that the patient had good nutritional status; however, physical examination revealed inadequate contact, leading to limitations in food intake. The patient was given a stepwise epilepsy diet via a combination of enteral and parenteral routes. <strong>Conclusion:</strong> During the six-day monitoring period, nutritional intake reached optimal target requirements: energy intake 100%, protein 99%, fat 91%, and carbohydrates 103%.
